Swiss Chard and Chickpea Salad
This is a great week-night meal, very easy to prepare and makes great leftovers. A healthy and simple dish that can be enjoyed on its own or as a side. If you do make it, feel free to give your feedback! Bon appétit!
Ingredients:
2 tbsp. olive oil
4 cloves of garlic (microplane/minced/grated)
1 head of Swiss chard (washed, cut into medium chunks)
1 can of chickpeas (skins removed and rinsed)
2 1/2 tbsp soy sauce
1 tsp. rice vinegar
1 tsp. sesame seed oil
Black pepper
Kosher salt
Instructions:
1) Wash and cut your Swiss chard into medium sized strips/chunks, set aside.
2) Put the olive oil in a large dutch oven or in a large pot and heat over medium high heat, add the garlic and mix until fragrant and it takes on a little colour.
3) Add the Swiss chard, mix well with oil and garlic. Cook until greens are tender and reduced in size.
4) Add the chickpeas, soy sauce, rice vinegar, sesame seed oil, black pepper and salt. Mix well.
Serve hot or cold.
